How to get and edit the large headers on the "trainers" and "classes" pages?

You can change it under the “Header Options” in the page edit window.

I mean how do we make it look like the sample ones, with an image in the background and text overlay.

You can find all the options under “Header Options” in the page edit window, pls enter the description of post/page in the text area under the “Description” and specify the title-description background , set the title height under “page/post title height”.
